The Egg coffee is a new type of coffee made by whisking eggs and condensed milk into a custard cream, adding it on top of the coffee, scooping it up and mixing well. The cream is thick and smooth. It’s like drinking custard cream, and it’s a coffee that has a delicate balance between bitterness and sweetness.
It was created by Mr. Nguyen Van Giang in 1946, when he was working as a bartender for the 5-star Metropole Hanoi hotel.
Although it has been a long time, the recipe is almost unchanged from the early days more than 70 years ago, with the main ingredients being egg yolks and Vietnamese coffee powder, sugar and secret spicesโฆ After being filtered and heated, the coffee is poured into a cup of golden egg cream, beaten according to the recipe and the mixing secret is still a secret to this day.
